Grilled carrots are an excellent vegetable to have. Simply halve carrots the long way so you have a flat side. Micro with a little water til carrots are not quite done. Drain and season with any flavored olive oil. Grill and enjoy.

Grilled broccoli is also amazing. Cut into long flat-ish pieces. Toss with olive oil, salt, and pepper. Grilled until grill marks appear and broccoli is tender.
Cauliflower would be great also. You can slice it 1/4 inch thick across like a steak, season of taste and grill 5 – 8 minutes.
